
If you have had a chance to learn a few things about me, it’s that I love to cook. Wanted to share a new Bolognese sauce that I created.
Beef Bolognese
Ingredients
1- 2 oz package of chopped pancetta
3-4 carrots, diced
1-onion, dices
1-2 cloves of garlic, diced
2 celery stalks, diced
2- 14.5 oz cans of fire roasted tomatoes
1- 8 oz can of tomato sauce
1-1/4 cup red wine
3/4 cup whipping cream
1-package of pappardelle pasta
1 lb of ground meat
1 lb of ground sausage
1/2 Table spoon of Italian blend of herbs
1/2 teaspoon of salt


Start by browning the sausage and ground beef. Drain the meat. Then remove and set aside. You will add this back to the sauce later.
If you want, you can have two skillets going simultaneously to keep things moving along.

Next, put the pancetta in pan and start cooking it. After pancetta starts cooking for a minute or two, add in your veggies so they can all cook and brown together. Brown veggies until they are translucent.

Next step, pour in half of red wine to your sautéed veggies. The wine also helps deglaze the pan a bit. Let the let the alcohol cook off for a couple of minutes then pour in the other half of the wine.

Get another pot of water boiling for your pasta and cook according to the directions. I do that at this point so the water has time to boil.
Grab the browned meat that you set aside and add it into the veggie/wine mixture. Season with 1/2 teaspoon of salt. Add 1 Table spoon of Italian seasoning blend (see the blend use below). It is actually a bread dipper herb mixture. I pretty much use this on all my Italian dishes. Simmer on low for about 5-10 mins.

After the sauce cooks and everything starts to reduce, add in the heavy whipping cream. Simmer for another 5 mins.
