
Shrimp ceviche is one of those meals that you can enjoy and not feel guilty about. It’s fast, easy and healthy to prepare. The most laborious part is probably the dicing of ingredients.
Here’s what you will need:
1 to 1-1/2 lbs of shrimp, peeled
1 avocado (diced)
1/2 cup of diced tomatoes (I use cherry ones)
1/4 teaspoon of salt
1-1/2 Tablespoon of lime juice
diced jalapeños
1/2 of ripe mango (if you don’t like mangoes, use cucumbers)
2 Tablespoons of cilantro chopped
First boil some water, when it starts boiling…add your shrimp and turn off the burner. You are slightly cooking it as the lime juice will do the rest of the work. Hence it being called ceviche.

Strain the shrimp and dice. Place shrimp into a bowl and add all your ingredients.
Then add your lime juice and mix it all together.

Serve with tortilla chips. Or you can get creative and serve in avocado boats. See below.
