Small Bite of Goodness

Happy Friday!  My first food post. So, something you may not know about me is that I am not a big breakfast person.  Mainly, because I just don’t have enough time as I am always on the run.  I am trying to do better at getting my morning jump started with a small bite. I am sharing with you an easy on-the-go breakfast or even a light lunch.  It is also a great appetizer for parties.

Ingredients:
4 slices bread
1 Avocado
1 package of smoked salmon
Dollop w/ cilantro dip (recipe below) and garnish with cilantro. Directions: Toast bread and cut into a bias for triangular shape. Slice avocad

o and layer onto bread. Layer with salmon then add a dollop of the sauce/dip below and garnish with cilantro. Salt and pepper to taste.  So, good and easy!!!

For the best cilantro dip:
Cilantro (half of the bundle)
1 8 oz Sour Cream
1/2 juice of Lime
1/2 cup of Helman’s Mayo
1/4 teaspoon of salt
Pepper
2 cloves of garlic
Jalapeno (if you want spicy)
1/4 cup of olive oil

Directions: In a processor, add a cup of loosely chopped cilantro, 8 oz of sour cream, 1/2 cup of Helman’s Mayo, juice of half a lime (depending on how large or small your lime is, you may need a little more), 2 cloves of garlic, 1/4 cup of olive oil, 1/4 teaspoon of salt (I used a little less), a couple of slices of jalapeño (I use 3-4, testing it for spiciness) depending on how spicy you want it. Blend & process.  Add more or less salt/pepper to taste.  NOTE:  you can add in half an avocado.  This makes it even more delicious.  If you add avocado, add another tablespoon of oil.

I use this sauce on my burgers, creamy salad dressing, great with chips or plantains, , also raw veggies as a dip, top of fish tacos, topping for grilled salmon, chicken, fajitas, etc… The possibilities are endless, it really is an amazing dip/sauce that goes with everything. Pour into a mason jar and refrigerate.  The family loves it so much that it doesn’t last in the fridge long as they are always looking for ways to use it.  I hope you enjoy, please leave me a comment. Trim about 3 inches off the bottom then loosely chop.

All the ingredients fit perfectly.  I love the small size of this processor…

    The blog looks great!! Avocado toast is life in the mornings…. will have to try with Salmon!

      Loving avocado anything…I don’t know what took me so long to figure out it was so good on toast with just salt and pepper. Thank you for checking the blog out. 🙂
